Position Summary:

The Kitchen Utility position involves maintaining a sanitary and organized kitchen by washing dishes and equipment, sweeping and mopping floors, removing trash, and cleaning work surfaces and storage areas. Other tasks may include transferring supplies, assisting with food prep, setting up and breaking down dining areas, and complying with safety and sanitation regulations. Responsibilities are performed in accordance with all Company standards, policies, and procedures. This position will report directly to the Sanitation Supervisor.

Essential Functions:

  • Responsible for practicing, supporting, and promoting North Fork Mono Casino's culture and always demonstrating exemplary Service Standards.
  • Wash dishes, pots, pans and utensils by hand or using a dishwashing machine.
  • Clean and sanitize worktables, counters, floors, and kitchen equipment according to sanitation guidelines.
  • Support cooks, and other kitchen team members with tasks like set-up, cleanup and inventory.
  • Monitor the stock of kitchen supplies, including cleaning agents, china, glass, silverware and other equipment.
  • Ensure proper maintenance and organization of kitchen and dining equipment.
  • Have knowledge of where the SDS booklet is located and understand its contents.
  • Work closely with the stewarding leadership team, culinary leadership and other food and beverage management to ensure a seamless workflow and meet departmental goals.
  • Assist with cleaning and maintaining equipment, including refrigerators and storage areas.
  • Empty trash containers and clean them as needed.
  • Sweep, mop and vacuum floors to maintain a clean and safe environment.
  • Adhere to all food safety, sanitation and infection control procedures.
  • Responsible for maintaining cleanliness and sanitation standards in accordance with department policies and the health department.
  • Assist with the set-up and breakdown of any special events as needed.
  • Other job-duties as assigned.
Required Skills/Abilities:
  • Ability to communicate effectively with Guests, Team Members and management in both written and verbal form.
  • Understanding of food safety regulations and hygiene practices.
  • Ability to work in a fast-paced, demanding environment, potentially in extreme temperatures.

Minimum Qualifications:

  • High School diploma or GED preferred.
  • Prior stewarding operations experience in a hospitality environment preferred.
  • Current Food Handler certification required or ability to acquire one (employer will provide upon hire).
  • Must be able to obtain and maintain a Gaming License from the Tribal Gaming Commission, which includes passing a background investigation.
  • Must be at least 18 years of age.

Physical Requirements:

  • Requires manual dexterity to perform job related functions.
  • Ability to sit, stand or walk for the duration of their shift.
  • Ability to bend, carry, climb, crawl, crouch, grasp, kneel, lift, pull, push, reach, sit, stand, or stoop during or for the duration of their shift.
  • Ability to move up to 50 lbs. with or without assistance.
  • Ability to work various shifts including days, evenings, weekends and graveyard and holidays.

Work Conditions:

Team Members will be in constant contact with fellow team members and Guests. Work includes the maintenance and care of the assigned work area. Work is typically in an area which may be unusually hot, cold, noisy, and may contain secondhand smoke. Work may be performed in a confined area. Performance of job duties will require standing, walking, lifting, reaching, pushing, pulling and grasping. Work may be scheduled at various hours, including working overtime, and during evening, weekends, and holidays. Work may entail trained chemical usage.
