Responsibilities:

What You’ll Do

• Lead the daily pastry operations, creating fresh desserts, breakfast breads, display pieces, and more across our ranch dining experiences.
• Oversee, train, and mentor pastry team members in techniques that emphasize quality and seasonality.
• Support the Executive Chef with menu development, recipe creation, and maintaining production timelines.
• Ensure compliance with local health codes, HACCP standards, and all White Lodging food safety SOPs.
• Monitor labor and food costs to align with operational budgets and profitability goals.
• Collaborate with FOH teams to ensure an exceptional guest experience from prep to plate.

What You’ll Bring

• Culinary degree or equivalent training, with expertise in pastry, baking, and dessert preparation.
• Previous experience leading pastry production in a resort, hotel, or high-volume environment.
• Strong understanding of food safety standards and operational controls.
• A creative, seasonal, and quality-first approach to recipe and menu development.
• Leadership experience and the ability to foster a positive, respectful kitchen culture.
• Flexibility to work evenings, weekends, and holidays in a dynamic hospitality setting.
