Position Summary:
The Sanitation Supervisor oversees kitchen cleanliness, team supervision and compliance with health and safety regulations. Key duties include managing Kitchen Utility Team Members, ensuring proper sanitation and equipment maintenance, monitoring cleaning supply inventory, training new hires, and coordinating with culinary and other departments for smooth operations. This hands-on role requires physical stamina and the ability to work in a fast-paced, often extreme, temperature environment. Responsibilities are performed in accordance with all Company standards, policies, and procedures. This position will report directly to the Executive Steward.
Essential Functions:
- Responsible for practicing, supporting, and promoting North Fork Mono Casino's culture and always demonstrating exemplary Service Standards.
- Managing and directing the workforce which includes hiring, training, evaluating, and disciplining Team Members on their assigned shift.
- Oversee the cleanliness of all kitchen areas, equipment, and utensils, ensuring compliance with health and safety regulations.
- Work with the Executive Steward in collaboration with the outlet Chef to manage, monitor and maintain the proper storage, maintenance and inventory of kitchen equipment, china, glassware, silverware and cleaning supplies.
- Have knowledge of where the SDS booklet is located and understand its contents.
- Responsible for ongoing and new Team Member training on proper cleaning techniques, sanitation procedures and safety protocols.
- Collaborate with Chefs and other departments to ensure smooth food and beverage operations.
- Work closely with the stewarding leadership team, culinary leadership and other food and beverage management to ensure a seamless workflow and meet departmental goals.
- Assist in waste management and sustainability efforts.
- Adhere to all food safety, sanitation and infection control procedures.
- Responsible for maintaining cleanliness and sanitation standards in accordance with department policies and the health department.
- Assist with the set-up and breakdown of any special events as needed.
- Other job-duties as assigned.
- Ability to communicate effectively with Guests, Team Members and management in both written and verbal form.
- Ability to identify and resolve operational issues and make sound business decisions.
- Ability to lead and manage a team.
- Understanding food safety regulations and hygiene practices.
- Ability to work in a fast-paced, demanding environment, potentially in extreme temperatures.
- Ability to manage multiple tasks efficiently, especially in a fast-paced environment.
Minimum Qualifications:
- High School diploma or GED preferred; some college or vocational training in the culinary field preferred.
- Minimum of one (1) year in stewarding operations in a hospitality environment required.
- Prior experience in a stewarding supervisory role is preferred.
- Current Food Handler Manager certification required or ability to acquire one (employer will provide upon hire).
- Must be able to obtain and maintain a Gaming License from the Tribal Gaming Commission, which includes passing a background investigation.
- Must be at least 21 years of age.
Physical Requirements:
- Requires manual dexterity to perform job related functions.
- Ability to sit, stand or walk for the duration of their shift.
- Ability to bend, carry, climb, crawl, crouch, grasp, kneel, lift, pull, push, reach, sit, stand, or stoop during or for the duration of their shift.
- Ability to move up to 50 lbs. with or without assistance.
- Ability to work various shifts including days, evenings, weekends, graveyard and holidays.
Work Conditions:
Team Members will be in constant contact with fellow team members and Guests. Work includes the maintenance and care of the assigned work area. Work is typically in an area which may be unusually hot, cold, noisy, and may contain secondhand smoke. Work may be performed in a confined area. Performance of job duties will require standing, walking, lifting, reaching, pushing, pulling and grasping. Work may be scheduled at various hours, including working overtime, and during evening, weekends, and holidays. Work may entail trained chemical usage.
