Notice - In order to qualify for this position, all candidates must hold a current license from the State of Wisconsin, Department of Agriculture as a Cheesemaker, or Trained Pasteurizer Operator.  Candidates without one of these will NOT be given consideration. 

 

This position offers a $2,000.00 signing bonus after 90-days of continuous employment.

 

General Purpose

Perform all duties to include the cooking of milk and specified ingredients to make cheese according to recipe. Pasteurize and separate milk to obtain prescribed butterfat content.

Job Duties and Responsibilities

  • Add ingredients, adjust casein and adjust fat level as needed for each recipe
  • Monitor the casein-to-fat ratio to maximize the potential cheese yield by determining the proper amount of fat to add to the available protein/casein in the milk
  • Perform CIP on HTST, vats, separators, curd and whey lines as needed and instructed
  • Collect and issue ingredients on SAP
  • Perform change over on silos and tanks as required
  • Report any food safety and food quality related issues to management immediately
  • Maintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issues
  • Follow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirements

Requirements

Education and Experience

  • High school diploma or equivalent preferred
  • Production or general work experienced preferred
  • Certification and/or License – may be required during course of employment

Knowledge, Skills, and Abilities

  • Able to follow directions and carry out instructions
  • Able to effectively work in a team environment
  • Able to legibly write entries for record keeping
  • Able to work in a fast-paced environment
  • Able to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals
  • Bilingual Preferred but, not required
