The Department of Corrections is seeking an energetic and qualified individual for the position of Cook A/C at Monroe Correctional Complex.
The Monroe Correctional Complex (MCC) is a 1700 bed male and transgender all-custody level facility located 30 miles northeast of Seattle. Employing approximately 1000 staff, the complex consists of five major units: the Washington State Reformatory Unit (WSRU), Sky River Treatment Center (SRTC), a large mental health in patient treatment unit, Twin Rivers Unit (TRU), Intensive Management Unit (IMU), and the Minimum-Security Unit (MSU). Services provided at the Monroe Correctional Complex include custody and security, classification, education, incarcerated individual work programs, health care (both inpatient and outpatient), mental health care, sex offender treatment, food service, maintenance, personnel, recreation, volunteer services, religious services, library services, offender records, visiting and extended family visits.

Position Duties
Duties:

The ideal candidate for the Cook A/C position is a problem-solver, resilient, optimized, and punctual.
Cook A/C duties include:
- Participate in the preparation and service of all food on a shift.
- Perform mathematical calculations, e.g., adding, subtracting, multiplying, and dividing, in converting recipes to determine appropriate quantity of food product required to meet menu requirements and population to be served.
- Ensure adherence to appropriate portion control protocols.
- Check food product during and after preparation, ensuring appropriate quality standards are met and that adequate quantity has been prepared.
- Understand and apply rethermalization of food process/procedures if appropriate.
- Practice and perform progressive cooking techniques used for quality control and to decrease waste within the food service area.
- Follow basic safety practices to preclude hazards and accidents such as slipping on wet floors or where food has been spilled, possible cuts from knives, and being burned from steam, hot foods, stove, hot grease, and water.
- Maintain and track knife and tool inventory.
- Supervise and instruct offenders in general cooking, baking, meat cutting, and food preparation and service.
- Supervise, train, and instruct offenders in general food services practices including receipt of goods, storage of goods, preparation, cooking, and serving of food.
- Supervise and train offenders in preparing special diets (medical or religious) and preparing and setting up satellite trays or carts and serving lines. Service of meals includes segregation trays, service of mainline, preparation and distribution of sack lunches, and lock down meals.
- Supervise, coach, instruct, train, and provide constructive feedback to offenders in the safe handling, operation, care, use, and cleaning of kitchen equipment such as mixers, slicers, grills, and steam kettles.
- In accordance with policy, train offenders in the preparation and serving of food, hygiene, Hazard Analysis and Critical Control Points (HACCP), use and care of equipment, and safety hazards (HAZMAT).
- Maintain and model the highest standards of personal hygiene.
- Schedule and organize daily work of offenders.
- Participates in the scheduling of materials and offender workers to meet customer completion dates as directed.
- Direct and assign I/I workers.
- Verify order information to ensure production/service fulfillment accuracy.
- As directed, coordinate raw material deliveries, finished goods delivery and support services. Drive non-CDL truck for food and meal delivery as required.
- Follow the established preventative maintenance schedule of equipment.
- Monitor and verify SOP’s are followed (e.g. identify and report deficiencies, conduct in-process inspections, verify correct raw material usage).
- Perform inventory and reporting tasks.
- Maintain and organize accurate food inventories and rotate stock items to prevent spoilage and pilferage.
- Receive, store, and distribute raw and pre-prepared or pre-packaged food products in accordance with required standards.
- Complete, monitor, and maintain Hazard Analysis and Critical Control Points (HACCP) logs.
- Prepare written reports, manually and by computer entry.
- Prepare work orders and equipment repair orders.
- Maintain proper record keeping for the DOC Safety Program.
- Ensure I/I have access to current DOC Safety Program related manuals, policies, operational memorandums, procedures, and standards.
- Within established timelines review and investigate accident reports to identify what caused the event and recommend preventative measures.
- Participate in and/or conduct monthly Safety committee meetings.
- Document safety and sanitation inspections, as required.
- Supervise and monitor offenders.
Minimum Qualifications
Qualifications:
REQUIRED:
- High School diploma or equivalent and successful completion of a culinary arts program at an accredited community college or vocational technical school.
OR - High School diploma or equivalent and two years of experience as a cook in a food service establishment.
AND
Ability to:

Special Requirements/Conditions of Employment:
- Maintain regular and reliable attendance.
- Complete a felony disclosure form prior to employment and submit to a criminal background check.
- Successfully complete, within mandated timeframes, employee orientation and all other mandatory annual in-service and other required training.
- Provide physical residential address and home telephone number to the Department of Corrections.
- Become familiar and comply with all Department policies and procedures and Collective Bargaining Agreements as applicable.
- Submit to drug testing in accordance with Collective Bargaining Agreement and agency policy.
- This position is included in a union shop.
- Possess and maintain a current Food Handlers permit.
- In an emergency situation employees may be asked to stay for an extended period of time and perform duties appropriate to the situation.
- Maintain a valid Washington State driver’s license.

Insurance Benefits

Retirement and Deferred Compensation
State Employees are members of the Washington Public Employees' Retirement System (PERS). New employees have the option of two employer contributed retirement programs. For additional information, check out the Department of Retirement Systems' web site.
Employees also have the ability to participate in the Deferred Compensation Program (DCP). This is a supplemental retirement savings program (similar to an IRA) that allows you control over the amount of pre-tax salary dollars you defer as well as the flexibility to choose between multiple investment options.
Social Security
All state employees are covered by the federal Social Security and Medicare systems. The state and the employee pay an equal amount into the system.
Public Service Loan Forgiveness

Holidays
Full-time and part-time employees are entitled to paid holidays and one paid personal holiday per calendar year.
Note: Employees who are members of certain Unions may be entitled to additional personal leave day(s), please refer to position specific Collective Bargaining Agreements for more information.
Full-time employees who work full monthly schedules qualify for holiday compensation if they are employed before the holiday and are in pay status for at least 80 nonovertime hours during the month of the holiday; or for the entire work shift preceding the holiday.
Part-time employees who are in pay status during the month of the holiday qualify for the holiday on a pro-rata basis. Compensation for holidays (including personal holiday) will be proportionate to the number of hours in pay status in the month to that required for full-time employment, excluding all holiday hours. Pay status includes hours worked and time on paid leave.
Sick Leave
Full-time employees earn eight hours of sick leave per month. Overtime eligible employees who are in pay status for less than 80 hours per month, earn a monthly proportionate to the number of hours in pay status, in the month to that required for full-time employment. Overtime exempt employees who are in pay status for less than 80 hours per month do not earn a monthly accrual of sick leave.
Sick leave accruals for part-time employees will be proportionate to the number of hours in pay status, in the month to that required for full-time employment. Pay status includes hours worked, time on paid leave and paid holiday.
Vacation (Annual Leave)
Full-time employees accrue vacation leave at the rates specified in WAC 357-31-165(1) or the applicable collective bargaining agreement (CBA). Full-time employees who are in pay status for less than 80 nonovertime hours in a month do not earn a monthly accrual of vacation leave.
Part-time employees accrue vacation leave hours in accordance with WAC 357-31-165(1) or the applicable collective bargaining agreement (CBA) on a pro rata basis. Vacation leave accrual will be proportionate to the number of hours in pay status, in the month to that required for full-time employment.
Pay status includes hours worked, time on paid leave and paid holiday.
As provided in WAC 357-58-175, an employer may authorize a lump-sum accrual of vacation leave or accelerate the vacation leave accrual rate to support the recruitment and/or retention of a candidate or employee for a Washington Management Service position. Vacation leave accrual rates may only be accelerated using the rates established WAC 357-31-165.
Note: Most agencies follow the civil service rules covering leave and holidays for exempt employees even though there is no requirement for them to do so. However, agencies are required to adhere to the applicable RCWs pertaining holidays and leave.
Military Leave
Washington State supports members of the armed forces with 21 days paid military leave per year.
Bereavement Leave
Most employees whose family member or household member dies, or for loss of pregnancy, are entitled to five (5) days of paid bereavement leave. In addition, the employer may approve other available leave types for the purpose of bereavement leave.
